1. Prep all ingredients: slice sausage, chop apples and onion, mince garlic, and prepare broccoli.
2. Heat a large skillet over medium-high heat and add olive oil.
3. Add sausage slices in a single layer and cook 3–4 minutes per side until golden brown, then remove and set aside.
4. Reduce heat to medium, add onions and cook 5 minutes until caramelized.
5. Stir in apples and garlic, cooking 4–5 minutes until apples soften.
6. Pour in apple cider or broth to deglaze, stir in mustard, return sausage, add broccoli, cover and cook 5–7 minutes until broccoli is tender, then season and serve.
