Orange Clove Roast Chicken with Honey Glaze

Ingredients

  • 1 whole chicken (45 lbs)
  • 23 fresh oranges, plus zest
  • 4 tablespoons honey
  • 68 whole cloves
  • 4 garlic cloves, minced
  • 23 sprigs fresh thyme or rosemary
  • 3 tablespoons olive oil or melted butter
  • Salt and black pepper, to taste
  • 1 medium onion, quartered
  • 1/2 cup chicken broth or water

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Rinse and pat dry the chicken, then place it breast-side up in a roasting pan.

    3. Season the cavity with salt, pepper, and half the garlic, then stuff with onion, orange slices, and herbs.

    4. Rub the skin with oil or butter, season with salt, pepper, and orange zest.

    5. In a saucepan, simmer honey, juice of one orange, and cloves for 3–4 minutes, then remove cloves.

    6. Pour broth into the pan and roast chicken uncovered for 30 minutes.

    7. Reduce oven to 350°F (175°C), brush glaze over chicken, and roast for 45–60 minutes, basting every 15–20 minutes.

    8. Check for doneness with a thermometer; it should read 165°F (74°C) in the thigh.

    9. Remove chicken and let rest for 10–15 minutes before carving.
