2. wash and pat dry zucchini and yellow squash
3. in a bowl toss sliced squash with olive oil, garlic, Italian seasoning, salt, and pepper
4. arrange squash in a single layer on a parchment lined baking sheet
5. sprinkle parmesan evenly over the squash
6. bake for 18 to 20 minutes until vegetables are tender
7. for extra crispness broil 2 to 3 minutes until cheese is golden
8. remove from oven and garnish with fresh herbs if desired
