1. Preheat the oven to 375°F (190°C).
2. Toss fresh peach slices or drained canned peaches with granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, and nutmeg in a mixing bowl.
3. Let the peach mixture sit for 10 minutes to draw out juices.
4. Melt 2 tablespoons of butter in a 10-inch cast iron skillet, then spread the peach mixture evenly in the skillet.
5. Whisk flour, baking powder, salt, and remaining sugar in a bowl.
6. Stir melted butter and milk into the dry ingredients until a thick batter forms.
7. Spoon or pour the batter over the peaches in the skillet, leaving some fruit visible.
8. Bake for 35-45 minutes until the topping is golden and the filling is bubbling.
9. Let the cobbler rest for 10 minutes before serving.
10. Serve warm, optionally with vanilla ice cream or whipped cream.
