1. In a bowl or food processor, combine 1 1/4 cups flour and 1/2 teaspoon salt, add 1/2 cup cold butter and pulse until coarse crumbs form
2. Drizzle in ice water one tablespoon at a time until dough comes together, shape into a disk, wrap and chill for 30 minutes
3. Roll chilled dough on a floured surface and fit into a 9-inch pie pan; trim edges and chill
4. Preheat oven to 375°F (190°C) and place a baking sheet inside
5. In a large bowl, toss sliced pears with maple syrup, vanilla, lemon juice, cornstarch, cinnamon, and salt
6. Pour pear mixture into chilled crust, spreading evenly
7. In a separate bowl, mix oats, flour, brown sugar, cinnamon, and walnuts, then cut in cold butter until coarse crumbs form
8. Sprinkle crumble topping over pear filling
9. Bake for 45–55 minutes until topping is golden and filling bubbles, covering with foil if browning too quickly
10. Let pie cool for at least 30 minutes before slicing
