  • 1 cup heavy whipping cream cold
  • 2 tablespoons powdered sugar
  • Pinch of salt
  • 1 cup unsalted butter softened
  • 3 to 4 cups powdered sugar
  • 2 to 3 tablespoons heavy cream or milk
  • 3/4 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Crushed candy canes for topping

  • Instructions

    1. Preheat oven to 350°F (177°C) and line a 12-cup muffin pan with liners

    2. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl

    3. Beat butter and granulated sugar until light and fluffy

    4. Add eggs one at a time, then peppermint and vanilla extracts

    5. Alternate adding dry ingredients and milk, mixing until just combined

    6. Stir in hot water or coffee until batter is smooth

    7. Fill liners two thirds full and bake 18–20 minutes until a toothpick comes out clean

    8. Cool cupcakes in pan 5 minutes then transfer to a rack to cool completely

    9. Melt chopped chocolate and let cool slightly

    10. Whip cold cream, powdered sugar, and salt to soft peaks

    11. Fold melted chocolate and peppermint extract into whipped cream gently

    12. Chill mousse 20–30 minutes until slightly firm

    13. Core the center of each cupcake and fill with peppermint chocolate mousse

    14. Beat softened butter until pale then add powdered sugar gradually

    15. Mix in peppermint and vanilla extracts and cream to desired consistency

    16. Pipe or spread frosting onto filled cupcakes

    17. Top with crushed candy canes and serve
