Description

  • 1 lb lean ground chicken (93% or higher)
  • 2 tbsp garlic-infused olive oil
  • 2 green onion tops (green part only), sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 cup shredded carrots
  • 2 tbsp low-sodium soy sauce or tamari
  • juice of 1 lime
  • 1 tbsp rice vinegar
  • 1 tsp honey (optional)
  • 1 tsp chili flakes
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • salt and pepper to taste
  • handful of spinach
  • fresh cilantro for garnish
  • lime wedges for serving
  • sesame seeds for garnish

  • Instructions

    1. In a small bowl, whisk together soy sauce, lime juice, rice vinegar, honey, chili flakes, smoked paprika, and cumin; set aside.

    2. Heat garlic-infused olive oil in a large skillet or wok over medium-high heat.

    3. Add ground chicken, season with salt and pepper, and cook 5–7 minutes until no pink remains, breaking into bite-sized pieces.

    4. Stir in green onion tops, bell peppers, zucchini, and carrots; cook 3–4 minutes until vegetables are tender-crisp.

    5. Pour sauce into the skillet and stir to coat evenly; simmer 1–2 minutes until slightly reduced.

    6. Add spinach and toss until wilted, 1 minute more.

    7. Remove from heat and garnish with cilantro, sesame seeds, and lime wedges.

    8. Serve immediately or portion into meal prep containers and refrigerate up to 4 days.
