Description

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

  • Instructions

    1. preheat oven to 350°F and line a 12-cup muffin pan with liners

    2. in a bowl whisk together flour baking soda baking powder pumpkin pie spice and salt

    3. in another bowl mix pumpkin puree yogurt eggs maple syrup oil and vanilla until smooth

    4. gently fold dry ingredients into wet ingredients until just combined

    5. stir in chocolate chips if using

    6. divide batter evenly among muffin cups

    7. bake for 18 to 22 minutes until a toothpick comes out clean

    8. cool muffins in the pan for 5 minutes then transfer to a wire rack
