  • 1 1/2 cups all-purpose flour
  • 34 tablespoons water
  • 1/2 teaspoon salt
  • 1 tablespoon oil (optional)

  • Instructions

    1. Combine sourdough discard, flour, salt, and water (and oil if using) in a mixing bowl

    2. Mix until a soft, slightly tacky dough forms, adding flour or water as needed

    3. Knead gently for 1-2 minutes until smooth

    4. Cover and rest dough for 20-30 minutes

    5. Divide dough into 8-10 pieces and form into balls

    6. Roll each ball into a 6-8 inch circle on a lightly floured surface

    7. Preheat a skillet or cast-iron pan over medium-high heat

    8. Cook each tortilla 20-30 seconds per side until golden spots appear, flipping once

    9. Stack cooked tortillas and cover to trap steam and keep soft

    10. Cool completely before storing in an airtight container
