Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 4 cups broccoli florets
  • 1/3 cup soy sauce (low-sodium if preferred)
  • 2 tbsp oyster sauce
  • 1/2 cup beef broth
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp cornstarch
  • 12 tsp brown sugar (optional)
  • 23 tbsp vegetable oil
  • 1 tsp sesame oil
  • Rice or noodles, for serving

  • Instructions

    1. Slice beef thinly against the grain and marinate with 1 tbsp soy sauce, 1 tsp cornstarch, and 1 tsp oil for 15 minutes.

    2. Bring a pot of water to a boil, blanch broccoli for 1 minute until bright green, then immediately rinse with cold water and drain.

    3. In a bowl, whisk together remaining soy sauce, oyster sauce, beef broth, cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water), brown sugar, and sesame oil.

    4. Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Stir-fry beef in batches for 2–3 minutes until just cooked, then remove and set aside.

    5. Add garlic and ginger to the wok and stir-fry for 30 seconds until fragrant.

    6. Return beef and broccoli to the wok, pour in the sauce, and cook for 2–3 minutes until sauce thickens and coats all ingredients.

    7. Serve hot over steamed rice or noodles.
