Scale
  • 1 lb ground beef (90% lean)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp sesame oil
  • 2 cups cooked rice (white, brown, or cauliflower)
  • 2 tbsp chopped green onions
  • 1 cup mixed vegetables (broccoli, carrots, zucchini)

  • Instructions

    1. Prepare rice according to package instructions.

    2. Heat sesame oil in a large skillet over medium-high heat.

    3. Add ground beef and break apart with a spatula; cook until no pink remains, about 5–7 minutes.

    4. In a bowl, whisk together soy sauce, brown sugar, garlic, and ginger.

    5. Drain excess fat from the skillet, then pour in the sauce and stir to coat beef.

    6. Simmer for 4–5 minutes until the sauce thickens.

    7. Add mixed vegetables to the skillet and sauté 3–4 minutes until tender-crisp.

    8. Divide rice among bowls and top with the beef mixture.

    9. Garnish with chopped green onions and serve immediately.
