1. Pat the steak cubes dry with paper towels.
2. Heat a cast-iron skillet over medium-high heat and add olive oil.
3. Arrange steak cubes in a single layer and sear for 1 to 2 minutes per side until golden brown.
4. Transfer seared steak to a plate and tent with foil to rest.
5. Reduce heat to medium, add 2 tbsp butter to the skillet and melt.
6. Add minced garlic and cook, stirring constantly, for about 30 seconds until fragrant.
7. Scrape up browned bits from the skillet, return steak bites and any juices to the pan.
8. Add remaining butter, toss to coat, and sprinkle with parsley and black pepper.
9. Remove from heat and transfer to a serving plate.
10. Serve immediately with your choice of sides and garnish as desired.
