  • 2 1/2 cups all purpose flour
  • 1/2 cup warm milk
  • 1 large egg
  • 2 tablespoons brown sugar

  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons melted unsalted butter
  • 2 tablespoons cinnamon sugar mix
  • 2 large eggs for custard
  • 3/4 cup milk for custard
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • butter or oil for cooking

  • Instructions

    1. In a bowl whisk starter, warm milk, melted butter and one egg until smooth

    2. Add flour, brown sugar, salt and half the cinnamon, stir to form a soft dough

    3. Knead on a floured surface for 5 minutes, rest 10 minutes if needed, then place in a bowl and cover

    4. Let dough rise 3 to 4 hours at room temperature or refrigerate overnight

    5. Roll dough into an 8×12 inch rectangle, brush with butter and sprinkle cinnamon sugar, then roll into a log

    6. Place log seam side down in a lined 8×4 inch loaf pan, cover and proof 1 to 2 hours until puffy

    7. Preheat oven to 375°F, bake loaf 30 to 35 minutes until golden and hollow sounding

    8. Cool completely on a wire rack before slicing

    9. For French toast whisk 2 eggs, 3/4 cup milk, vanilla, cinnamon and salt

    10. Dip each bread slice 15 to 20 seconds per side in custard without oversoaking

    11. Heat a skillet over medium, grease lightly, cook slices 2 to 3 minutes per side until caramelized

    12. Serve with toppings like maple syrup, berries, yogurt or low sugar alternatives
