Description

  • 1 cup bubbly sourdough starter (active and recently fed)
  • 1 1/2 cups all-purpose flour (or a 1:1 gluten-free mix)
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 1/2 cup cold cream or buttermilk (dairy-free milk and vegan butter can be substituted)
  • 1 cup heavy whipping cream (or coconut cream for dairy-free)
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 cup sliced strawberries
  • 1 cup whole blueberries
  • 1 cup raspberries (optional)

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper

    2. In a bowl whisk flour, baking powder, sugar, and salt

    3. Cut cold butter into dry ingredients until mixture resembles coarse crumbs

    4. Stir in sourdough starter and cream until just combined without overmixing

    5. Turn dough onto a floured surface and pat to 3/4 inch thickness

    6. Cut out 3-inch biscuits and place on prepared sheet

    7. Bake for 18 to 20 minutes until golden brown and cool on a wire rack

    8. In a chilled bowl beat heavy cream, powdered sugar, and vanilla until soft peaks form

    9. Slice shortcakes in half and layer with whipped cream, strawberries, blueberries, and raspberries

    10. Top with biscuit lids, extra cream, and berries before serving
