  • 34 medium fresh beets, trimmed and washed
  • 23 oranges, peeled and segmented
  • 1/2 cup crumbled goat cheese
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 tablespoon lemon juice
  • salt and pepper to taste

  • Instructions

    1. Preheat oven to 400°F (200°C). Trim and wrap beets in foil, roast for 40–50 minutes until tender.

    2. Allow beets to cool slightly, then peel skins using paper towels or gloves and slice into wedges.

    3. Prepare oranges by removing peel and white pith, then slice into rounds or segments.

    4. In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, salt, and pepper to make the dressing.

    5. Arrange mixed greens on a platter, top with beet wedges, orange slices, and crumbled goat cheese. Drizzle dressing over the salad and toss gently.
