1. Preheat oven to 400°F (200°C), slice tops off garlic heads, drizzle with olive oil or butter, wrap in foil and roast for 35–40 minutes until soft
2. Cool roasted garlic, squeeze cloves into a bowl, mash into a paste and mix with rosemary, thyme, parsley, melted butter and salt
3. In a bowl combine sourdough starter, water and sugar, stir, add bread flour and salt, mix into a shaggy dough and rest for 30 minutes
4. Add olive oil, knead dough until smooth and elastic (8–10 minutes by hand), place in greased bowl, cover and ferment at room temperature for 4–6 hours until doubled
5. Line a tray with parchment, divide dough into golf ball–sized portions, fill each with 1/2 tsp roasted garlic mixture, seal and form balls
6. Arrange filled balls on tray in tree shape, cover and proof for 45–60 minutes until puffed and touching
7. Preheat oven to 375°F (190°C), brush dough with melted butter, bake for 25–30 minutes until golden and hollow-sounding
8. Brush warm loaf with finishing butter, sprinkle with sea salt flakes and parsley, let cool for 15 minutes before serving
