Description

A cozy and simple French apple custard cake featuring tender apple slices baked in a creamy custard on a buttery base. Perfect for autumn gatherings or a comforting dessert any time of year.


Ingredients

  • 3–4 medium apples, peeled and thinly sliced
  • 3 large eggs
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

  • Instructions

    1. Preheat the oven to 350°F (175°C) and butter and line a 9-inch cake pan with parchment paper.

    2. In a large bowl whisk eggs and sugar until pale and slightly thickened.

    3. Slowly add melted butter and milk, whisking until smooth.

    4. Sift flour, baking powder, and salt into the mixture and fold gently until just combined.

    5. Arrange half of the apple slices in the bottom of the pan in an overlapping layer.

    6. Pour half of the batter over the apples, making sure it seeps into the gaps.

    7. Arrange remaining apple slices on top and pour the rest of the batter over them.

    8. Bake for 35–40 minutes until the top is golden and the center still jiggles slightly.

    9. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool further.

    10. Dust with powdered sugar and serve warm or chilled, optionally with cream or a sprinkle of cinnamon.
