No-cook Halloween appetizer made with salami, mini mozzarella, and olives to resemble spooky eyeballs—fast, fun, and party-ready.
Ingredients
24 thin salami slices (Genoa or peppered)
24 mini mozzarella balls (ciliegine), drained and patted dry
12 large black olives, sliced into 24 rounds
1 roasted red pepper, cut into thin strips (or red food coloring for veins)
Toothpicks or 6-inch party skewers
1 tablespoon olive oil (optional, for shine)
1 teaspoon balsamic glaze (optional, to dot pupils)
Small basil or baby spinach leaves (optional, garnish)
Kosher salt and black pepper (optional)
Hot sauce or ketchup (optional, for “bloody” drizzle)
Instructions
1. Pat mozzarella balls very dry with paper towels; slice olives into 24 neat rounds.
2. Lay the salami slices flat on a board.
3. Place one mozzarella ball in the center of each salami slice.
4. Top each mozzarella ball with an olive round to form the pupil.
5. Add thin red pepper strips as bloodshot veins, or paint lines using a toothpick dipped in red food coloring.
6. Skewer through the center of each eyeball to secure; transfer to a platter.
7. Lightly brush with olive oil for shine; dot balsamic glaze in the pupil if desired and season lightly.
8. Serve chilled or cool with optional hot sauce or ketchup drizzled around for a spooky effect.
