1. Pat chicken dry and season both sides with salt and pepper
2. Heat olive oil or butter in a large skillet over medium-high heat until shimmering
3. Add chicken and sear 4–5 minutes per side until golden and nearly cooked through, then transfer to a plate
4. In the same skillet melt butter if needed and add mushrooms, cooking undisturbed until golden
5. Add minced garlic to the mushrooms and sauté until fragrant
6. Pour in chicken broth and scrape up browned bits from the bottom of the pan
7. Stir in Dijon mustard, thyme, and heavy cream and reduce heat to low
8. Whisk in Parmesan until the sauce is smooth and slightly thickened
9. Return chicken to the skillet, spoon sauce over, and simmer 5–7 minutes until chicken is cooked through
10. Adjust seasoning, garnish with parsley, and serve immediately
