  • 12 ounces pork sausage
  • 2 cups sourdough bread cubes, toasted
  • 1 large apple, diced
  • 1 small yellow onion, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • Optional: 1/4 cup shredded Parmesan or Gruyère

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper

    2. Brush cut sides of squash with 1 tablespoon olive oil and season with salt and pepper

    3. Place squash halves cut-side down on the baking sheet and roast for 40–45 minutes until tender

    4. Meanwhile heat remaining olive oil in a skillet over medium heat and cook sausage until browned

    5. Add onion and cook until translucent, then stir in apple and sage and cook 3–5 minutes until apple is slightly tender

    6. Transfer sausage mixture to a bowl, add sourdough cubes and thyme, and toss to combine

    7. Flip roasted squash halves cut-side up and fill each with the sausage mixture

    8. Sprinkle cheese on top if using and bake at 375°F (190°C) for 15–20 minutes until golden

    9. Remove from oven and let rest 5 minutes before serving

    10. Garnish with additional fresh herbs or a drizzle of olive oil if desired
