  • 1 lb ground turkey
  • 3 medium potatoes, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 12 bell peppers, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or Italian seasoning
  • salt and black pepper to taste
  • fresh parsley for garnish

  • Instructions

    1. Wash and dice potatoes into small cubes.

    2. Heat a large skillet over medium heat and add olive oil.

    3. Add ground turkey, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.

    4. In the same skillet, add onion and garlic and cook until fragrant, about 2-3 minutes.

    5. Add diced potatoes and bell peppers, season with smoked paprika and dried herbs, and cook 10-15 minutes until potatoes are tender and edges are crisp.

    6. Return browned turkey to the skillet, stir to combine, and cook an additional 3-5 minutes to meld flavors.

    7. Adjust seasoning, sprinkle with fresh parsley, and serve hot.
