2. Melt butter in a large skillet over medium heat and sauté squash and onion until tender, about 8 minutes, then drain any excess liquid
3. In a medium saucepan, melt remaining butter, whisk in flour to form a roux and cook for 1 minute
4. Slowly whisk in milk or half-and-half until sauce thickens, then stir in most of the shredded cheese until melted
5. Season the sauce with salt and pepper and fold in the sautéed squash and onion until evenly coated
6. Transfer mixture to prepared casserole dish and spread evenly
7. Top with remaining cheese and sprinkle breadcrumbs or crushed crackers over the top
8. Bake uncovered for 25–30 minutes until bubbly and golden
