  • 1 lb new potatoes, halved
  • 1 lb asparagus, trimmed
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp paprika

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper or grease lightly.

    2. Toss halved potatoes with olive oil, salt, pepper, and paprika; spread in a single layer and roast for 15 minutes, turning once.

    3. Meanwhile, whisk melted butter, minced garlic, lemon juice, and chopped parsley in a small bowl.

    4. After 15 minutes, push potatoes to one side, place salmon skin-side down in the center, and arrange asparagus alongside.

    5. Drizzle garlic butter mixture over salmon, asparagus, and potatoes.

    6. Return pan to oven and roast for 12–15 minutes until salmon flakes easily, optionally broiling for 2 minutes for extra color.
