A light, all-in-one gluten free sheet pan dinner featuring roasted chicken, Brussels sprouts, and butternut squash tossed in a tangy mustard sauce.

Instructions
1. Preheat oven to 400°F (200°C).
2. Trim and halve Brussels sprouts and cube butternut squash.
3. Toss vegetables with 1 tablespoon olive oil, salt, pepper, rosemary, and thyme.
4. Pat chicken dry and coat with remaining olive oil, garlic, and mustard sauce.
5. Arrange vegetables on a sheet pan and place chicken in the center.
6. Roast for 25 to 30 minutes, stirring vegetables halfway, until chicken reaches 165°F and vegetables are tender.
7. Brush additional sauce on chicken during the last 5 minutes of roasting.
8. Let rest for 5 minutes before serving.
