Description

A comforting, easy-to-make slow cooker chicken noodle soup loaded with vibrant vegetables, tender chicken, and a flavorful homemade broth.


Ingredients

  • 1 lb boneless skinless chicken breasts, trimmed and halved
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 3 cups egg noodles
  • 1 tsp thyme
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

  • Instructions

    1. Prep and chop all vegetables and halve the chicken breasts

    2. Layer chicken, carrots, celery, onion, and garlic in the slow cooker

    3. Pour in chicken broth, add thyme, bay leaf, salt, and pepper

    4. Cook on low for 6-7 hours or high for 3-4 hours

    5. Remove chicken and shred with forks, then return to the slow cooker

    6. Stir in egg noodles and fresh vegetables 20-30 minutes before serving

    7. Taste and adjust seasoning, then garnish with parsley before serving
