Instructions
1. Whisk flour and 1 cup of chicken broth in a small bowl until smooth and set aside.
2. Place chicken breasts or thighs in the bottom of the slow cooker.
3. Add diced onion, carrots, celery, potatoes, garlic, thyme, rosemary, salt, and pepper on top of the chicken.
4. Pour remaining chicken broth and the flour mixture over the layered ingredients without stirring.
5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
6. About one hour before the end of cooking, stir in frozen peas and heavy cream.
7. If needed, thicken the sauce by whisking additional flour with broth or uncovering the lid to reduce.
8. Bake biscuits or puff pastry separately according to package instructions.
9. Shred the chicken inside the slow cooker, stir to combine, then serve topped with baked biscuits or pastry.
