Slow Cooker Kale & Bean Soup – Simple and Delicious

Description

A hearty and nutritious soup featuring kale and white beans slow cooked to perfection. This simple recipe combines minimal prep with comforting flavors for an easy weeknight meal.


Ingredients

  • 4 cups chopped kale (fresh or frozen)
  • 2 cans white beans (drained and rinsed)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable or chicken broth
  • 2 carrots, chopped
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • 1 tsp dried thyme
  • 1 bay leaf

  • Instructions

    1. Heat olive oil in a skillet over medium heat and sauté diced onion for 3–4 minutes until translucent.

    2. Add minced garlic and cook for 30 seconds, then transfer the mixture to the slow cooker.

    3. Add kale, beans, carrots, broth, thyme, bay leaf, salt, and pepper. Stir gently to combine.

    4. Cover and cook on Low for 6 hours. Thirty minutes before the end, taste and adjust seasoning or mash some beans for a thicker texture.

    5. Ladle soup into bowls and serve hot, optionally garnished with a drizzle of olive oil or grated Parmesan.
