1. Heat olive oil in a skillet over medium heat and sauté diced onion for 3–4 minutes until translucent.
2. Add minced garlic and cook for 30 seconds, then transfer the mixture to the slow cooker.
3. Add kale, beans, carrots, broth, thyme, bay leaf, salt, and pepper. Stir gently to combine.
4. Cover and cook on Low for 6 hours. Thirty minutes before the end, taste and adjust seasoning or mash some beans for a thicker texture.
5. Ladle soup into bowls and serve hot, optionally garnished with a drizzle of olive oil or grated Parmesan.
