1. Divide beef into 4 loose 4-ounce balls and keep chilled
2. Preheat a cast-iron griddle or heavy skillet over medium-high heat
3. Place a beef ball on the hot surface and smash with a spatula to 1/4-inch thickness
4. Season the patty with salt and pepper immediately after smashing
5. Cook undisturbed for 1½ to 2 minutes until edges are crisp
6. Flip the patty and top with American cheese, cooking 30 seconds more
7. Meanwhile, mix mayonnaise, ketchup, mustard, pickles, pickle juice, paprika and garlic powder for the sauce
8. Toast buttered buns on the griddle, spread sauce on both sides, layer burger, cheese, pickles, onion and lettuce, then top and serve
