1. Preheat cast-iron skillet over medium-high heat until smoking hot.
2. Divide beef into 2-ounce balls.
3. Place balls on skillet and smash with spatula for 10 seconds.
4. Season patties with salt and pepper and cook 1-2 minutes until edges brown.
5. Flip patties, add cheese, cover and melt 30 seconds.
6. Toast buns cut side down until golden.
7. Combine mayonnaise, ketchup, mustard, pickles, onion powder, smoked paprika, and salt to make sauce and chill.
8. Spread sauce on buns, assemble patties with pickles and onions, and serve.
