Description

  • 1 1/2 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon sugar or honey
  • 1/4 cup olive oil plus more for drizzling
  • 2 tablespoons fresh rosemary chopped
  • 12 teaspoons smoked salt or sea salt flakes
  • Optional toppings: cherry tomatoes, caramelized onions, garlic slivers

  • Instructions

    1. In a large bowl combine warm water, sugar or honey, and yeast. Let sit 5-10 minutes until frothy.

    2. Add flour, salt, and 2 tablespoons olive oil to the yeast mixture. Stir until a sticky dough forms.

    3. Cover the bowl and let dough rise in a warm place for 45-60 minutes until doubled in size.

    4. Grease a baking sheet with olive oil and transfer the dough. Gently stretch to fit the pan and create dimples with fingertips.

    5. Drizzle the dough with olive oil and scatter rosemary and smoked salt over the surface.

    6. Let the dough rest uncovered for 20-25 minutes for a second rise.

    7. Preheat oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown and crisp.

    8. Allow the focaccia to cool for 10 minutes before slicing and serving.
