1. Preheat oven to 300°F and toast sourdough cubes for 10 to 15 minutes until dry
2. Preheat smoker to 225 to 250°F with wood chips
3. Smoke sausage for 45 to 60 minutes, then slice or crumble
4. Melt butter in a skillet and cook onion and celery until translucent
5. Stir in garlic, sage, thyme, and rosemary and cook until fragrant
6. In a bowl, combine toasted bread cubes, sausage, and aromatic mixture
7. Whisk broth and eggs and pour over bread mixture, tossing gently
8. Transfer to a greased 9×13 baking dish and cover with foil
9. Bake at 350°F for 25 minutes, then uncover and bake 15 to 20 minutes until golden
10. Let sit for 10 minutes before serving
