Description

This Soft Lemon Sourdough Bread pairs fragrant citrus flavor with a tender sourdough crumb into a healthy small loaf perfect for breakfast or tea.


Ingredients

  • 100 g active or discard sourdough starter
  • 150 g warm water
  • 100 g whole wheat flour
  • 180 g bread flour
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1.5 tablespoons honey
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt

  • Instructions

    1. Combine wet ingredients and starter until smooth

    2. Add dry ingredients and mix until a slightly sticky dough forms

    3. Rest the dough (autolyse) for 30 minutes

    4. Perform stretch and folds three times at 30 minute intervals

    5. Bulk ferment the dough for 4 to 6 hours until risen and bubbly

    6. Shape the dough into a loaf and place in an 8×4-inch pan

    7. Final proof for 1.5 to 2 hours until puffy

    8. Preheat oven to 190C and prepare steam in the oven

    9. Score the loaf and bake for 30 to 35 minutes until golden

    10. Cool completely on a wire rack before slicing
