3. Stir in the sourdough starter and molasses until fully combined.
4. In a separate bowl sift together the flour, baking soda, salt, ginger, cinnamon, and cloves.
5. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
6. Divide the dough into two disks, wrap in plastic wrap, and chill for at least 1 hour.
7. Roll the dough to 1/4-inch thickness, cut with cookie cutters, and place on a parchment-lined baking sheet.
8. Bake at 350°F for 8-10 minutes until the edges are set, then cool on the pan for 5 minutes before transferring to a cooling rack.
