  • 1.5 cups chopped apples
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup softened butter
  • 1/2 teaspoon ground cinnamon

  • Instructions

    1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.

    2. In a medium bowl whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

    3. In a large bowl whisk melted butter and brown sugar until smooth, then add eggs one at a time, stir in yogurt and vanilla extract, and fold in sourdough starter discard.

    4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.

    5. Fold in the chopped apples.

    6. Pour the batter into the prepared loaf pan.

    7. In a small bowl mix flour, brown sugar, softened butter, and cinnamon with your fingers until coarse crumbs form.

    8. Sprinkle the crumb topping evenly over the batter and gently press it down.

    9. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out with a few moist crumbs, tenting with foil if the top browns too quickly.
