Sourdough Bruschetta with Cherry Tomatoes and Creamy Burrata

Description

A simple yet elegant appetizer featuring toasted sourdough topped with marinated cherry tomatoes and creamy burrata, perfect for casual lunches or summer gatherings.


Ingredients

  • 1 medium sourdough loaf, sliced into 8 thick slices
  • 23 balls (about 8 oz) burrata cheese
  • 2 cups cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil, divided
  • Handful fresh basil leaves, torn
  • 12 garlic cloves, halved
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 12 tsp balsamic glaze (optional)

  • Instructions

    1. Combine halved cherry tomatoes, 2 tbsp olive oil, salt, and pepper in a bowl and let rest for 10 minutes.

    2. Preheat oven to 400°F (200°C) and brush sourdough slices with remaining olive oil.

    3. Toast sourdough slices on a baking sheet for 5–7 minutes, flipping once, until golden and crisp.

    4. Rub each warm toast with cut side of garlic clove.

    5. Top each slice with marinated tomato mixture, allowing juices to soak in.

    6. Tear burrata and distribute pieces over the tomatoes on each toast.

    7. Drizzle with olive oil, season with salt and pepper, and optionally finish with balsamic glaze.

    8. Garnish with torn basil leaves and serve immediately.
