1. Slice the sourdough loaf into eight 1 inch slices and let slightly stale slices sit at room temperature for best absorption
2. In a bowl whisk eggs milk sugar cinnamon vanilla and salt until smooth and let rest for 2 minutes
3. Heat a nonstick skillet over medium heat and melt half the butter
4. Dip each slice in custard mixture for 20 to 25 seconds per side and let excess drip off
5. Place soaked slices in the skillet and cook 2 to 3 minutes per side until deep golden brown
6. Add remaining butter as needed and keep cooked slices warm in a 200°F oven
7. Serve slices with maple syrup fresh fruit or yogurt as desired
