  • 1 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • optional herbs or seeds (rosemary, sesame)
  • 1 cup sourdough discard
  • 1 1/2 cups all-purpose flour
  • 1 tbsp melted butter
  • 1 tsp honey or brown sugar
  • 1 tsp coarse salt
  • 1 tsp baking soda (for dip)
  • water as needed
  • olive oil for brushing
  • extra coarse salt for topping

  • Instructions

    1. Combine 1 cup sourdough discard, 1 cup flour, 2 tbsp olive oil, 1/2 tsp sea salt and herbs or seeds in a bowl and stir to form dough

    2. Combine 1 cup discard, 1 1/2 cups flour, melted butter, honey, coarse salt and stir to form soft dough

    3. Knead each dough briefly, then wrap and refrigerate for 30 minutes

    4. Preheat oven to 350°F (175°C)

    5. Roll sourdough cracker dough to 1/8 inch thickness and pretzel dough slightly thicker between parchment

    6. Cut into desired shapes with a pizza cutter or knife

    7. For pretzel crackers, dip pieces in a baking soda water solution before placing on baking sheet

    8. Arrange crackers on parchment-lined sheets, brush with olive oil and sprinkle extra salt or seasonings

    9. Bake sourdough crackers 18–22 minutes until golden; bake pretzel crackers 12–15 minutes

    10. Transfer to cooling rack immediately to crisp, then store in an airtight container
