Sourdough Discard Dessert Pizza

  • Total Time: 30-35 minutes
  • Yield: 1 (10-12 inch) pizza 1x

Description

Transform your sourdough discard into a delightful dessert pizza, perfect for a unique sweet treat or a fun family baking project. This sourdough idea offers a delicious way to use your sourdough mix in recipes, turning something you might otherwise discard into a star. It’s a fantastic way to enjoy the subtle tang of sourdough in a sweet context, making it a hit with both kids and adults.

Ingredients

Scale
  • 1 cup sourdough discard (unfed, at room temperature)
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon milk
  • Assorted fresh fruit for topping (strawberries, blueberries, raspberries, sliced kiwi, etc.)
  • optional: chocolate chips, chopped nuts, a drizzle of honey or maple syrup

  • Instructions

    1. 1. Prepare the Sourdough Crust Mixture: In a large bowl, combine the sourdough discard, granulated sugar, melted butter, vanilla extract, cinnamon, and salt. Stir until everything is well combined and smooth. This forms the flavorful base for your pizza.

    2. 2. Add the Flour and Form the Dough: Gradually add the all-purpose flour to the sourdough mixture, mixing until a soft dough forms. It should be slightly sticky but manageable. If it’s too sticky, add a tiny bit more flour, one tablespoon at a time.

    3. 3. Shape the Pizza Crust: Lightly flour a clean surface or a piece of parchment paper. Transfer the dough to the floured surface and gently press or roll it into a 10-12 inch round or rectangular shape, about 1/4 inch thick. You can also press it directly onto a lightly greased baking sheet. The edges can be slightly thicker to create a nice crust.

    4. 4. Bake the Sourdough Crust: Transfer the shaped dough on the parchment paper to a baking sheet. Bake in a preheated oven at 375 F (190 C) for 15-20 minutes, or until the crust is golden brown and cooked through. It should sound hollow when tapped lightly. Let the crust cool completely on a wire rack before adding toppings.

    5. 5. Make the Cream Cheese Frosting: While the crust cools, prepare the frosting. In a medium bowl, beat together the softened cream cheese, powdered sugar, and milk until smooth and creamy. A hand mixer makes this quick and easy, but a whisk works too.

    6. 6. Assemble and Decorate: Once the crust is completely cool, spread the cream cheese frosting evenly over the surface. Arrange your chosen fresh fruit decoratively on top of the frosting. If using, sprinkle with chocolate chips, chopped nuts, or drizzle with honey or maple syrup. Slice and serve immediately for the best experience.
