1. In a large bowl mix starter, warm milk, and sugar until dissolved.
2. Add flour, salt, and softened butter; stir until a sticky dough forms.
3. Cover and rest dough for 30 minutes.
4. Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
5. Place dough in an oiled bowl, cover, and ferment 4–6 hours with one hourly stretch and fold.
6. Deflate dough and divide into 10–12 pieces; roll each into a smooth ball.
7. Arrange balls in a circle on parchment to form a wreath, adding two pieces to shape a small heart at the top.
8. Cover and proof for 2–3 hours at room temperature or refrigerate overnight.
9. Preheat oven to 375°F (190°C).
10. Brush wreath with beaten egg or melted butter and tuck rosemary and berries between rolls.
11. Bake for 25–30 minutes until deep golden and hollow sounding.
12. Cool on a rack for 30 minutes before serving.
