1. Refresh the sourdough starter 6–8 hours before baking
2. Mix flour, salt, water and starter into a rough dough and knead until smooth
3. Let dough rise, then fold in roasted garlic or other chosen inclusions
4. Divide dough into six pieces, shape into bagel rings, chill overnight
5. Boil bagels 30–45 seconds per side in water with honey or baking soda
6. Coat boiled bagels with everything seasoning and bake at 425°F until golden
7. Slice and fill each bagel with eggs, cheese, greens and a smear of cream cheese
