Sourdough Grilled Cheese Melts with Caramelized Onions & Gruyere

Description

These sourdough grilled cheese melts feature tangy sourdough bread, gooey melted gruyere, and sweet caramelized onions for the ultimate fall comfort food. Crisp on the outside and creamy inside, they pair perfectly with soups and salads for a cozy fancy lunch.


Ingredients

  • 4 slices sourdough bread
  • 1 1/2 cups shredded gruyere cheese
  • 2 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp fresh thyme, optional
  • pinch of salt
  • freshly ground black pepper, to taste
  • 1 tsp dijon mustard, optional

  • Instructions

    1. Heat butter and olive oil in a skillet over medium-low heat

    2. Add sliced onions and pinch of salt and cook 25–30 minutes until deep brown, stirring occasionally

    3. Stir in thyme if using and set onions aside

    4. Butter one side of each bread slice

    5. Spread dijon mustard on the unbuttered side if desired

    6. Layer gruyere on two slices, top with caramelized onions, then remaining bread slices, buttered side out

    7. Heat skillet over medium heat and place sandwiches in pan

    8. Press lightly and cook 3–4 minutes per side until golden brown and cheese is melted

    9. Let rest briefly, then slice diagonally and serve
