Ingredients
Instructions
1. Prepare the Bread and Butter: Take your two slices of sourdough bread and generously spread about 1 tablespoon of softened butter on one side of each slice. Make sure the butter covers the entire surface right to the edges for even browning. This buttered side will be the exterior of your sandwich.
2. Assemble the First Side: Place one slice of sourdough bread, butter-side down, into a cold or preheated non-stick skillet or griddle over medium-low heat. The butter will start to sizzle gently as the pan warms up.
3. Layer the Cheese: Immediately place one slice of cheddar cheese on top of the bread in the skillet. The warmth of the pan will begin to soften the cheese, helping it melt beautifully.
4. Add the Tomatoes and Seasoning: Arrange the fresh tomato slices over the cheddar cheese. Sprinkle a small pinch of salt and black pepper over the tomatoes to enhance their flavor.
5. Top with More Cheese and Bread: Place the second slice of cheddar cheese on top of the tomatoes. Then, take the other slice of sourdough bread and place it butter-side up on top of the cheese.
6. Grill Until Golden: Cook the sandwich for about 4-5 minutes on the first side, or until the bottom slice of bread is golden brown and the cheese is starting to melt. You can gently lift an edge with a spatula to check the color.
7. Flip and Finish: Carefully flip the sandwich over using a spatula. Continue to cook for another 4-5 minutes on the second side, until that side is also golden brown and the cheese is fully melted and gooey. The tomatoes should be warmed through.
8. Serve Immediately: Once both sides are perfectly golden and the cheese is bubbling, remove the grilled cheese from the skillet. Slice it in half diagonally and serve hot.
