1. Preheat oven to 400°F (200°C) and roast cherry tomatoes with 1 tablespoon olive oil, salt, and pepper for 20 minutes.
2. Brush one side of each sourdough slice with olive oil or butter.
3. On the un-oiled side, layer mozzarella, roasted tomatoes, and basil leaves. Add pesto, balsamic glaze, prosciutto, or arugula if desired.
4. Heat a skillet over medium heat. Place sandwich oil-side down and cook for 3-4 minutes until golden brown.
5. Flip and cook the other side for 3-4 minutes until cheese is melted and bread is crisp.
6. Let sandwiches rest for 1 minute, then slice diagonally and serve.
