Description

  • 1 cup sourdough discard
  • 1/2 cup grated Parmesan
  • 2 tablespoons olive oil
  • 1 cup all-purpose flour
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon sea salt flakes
  • 12 tablespoons water

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. In a medium bowl combine sourdough discard, grated Parmesan, olive oil, and chopped rosemary.

    3. Gradually add flour and mix until dough forms, adding water by the tablespoon only if needed.

    4. Let dough rest for 15 minutes at room temperature.

    5. On a lightly floured surface roll dough to about 1/16 inch thickness.

    6. Brush dough lightly with olive oil and sprinkle evenly with sea salt flakes.

    7. Cut dough into desired shapes using a knife or dough cutter.

    8. Arrange crackers on prepared baking sheet, leaving space between each piece.

    9. Bake for 15–18 minutes, rotating pan halfway through, until edges are golden.

    10. Transfer crackers to a wire rack and cool completely to crisp up.
