1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan
2. Whisk flour, baking powder, baking soda, cinnamon, and salt in a bowl
3. In another bowl, whisk sourdough discard, brown sugar, and granulated sugar
4. Add eggs, oil, vanilla, and yogurt, whisking until smooth
5. Fold dry ingredients into wet ingredients until just combined
6. Toss peaches with lemon juice, cinnamon, and cornstarch, then fold most into batter
7. Pour half the batter into the pan, top with reserved peaches, then add remaining batter
8. Prepare streusel by combining flour, brown sugar, oats, and butter until crumbly
9. Sprinkle streusel over the batter and peaches
10. Bake for 55–65 minutes until a toothpick comes out clean with few crumbs
11. Cool in pan for 10 minutes, then transfer to a wire rack and cool before slicing
