Description

A seasonal twist on sourdough bread combining tangy starter flavor with juicy summer peaches for a sweet and tangy loaf perfect for summer gatherings.


Ingredients

  • 1 cup active sourdough starter or discard, at room temperature
  • 3 cups all-purpose flour
  • 2 cups fresh ripe peaches, diced and drained
  • 1/2 cup brown sugar
  • 4 tbsp butter, melted
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt

  • Instructions

    1. Feed the starter or let the discard come to room temperature.

    2. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.

    3. In a bowl whisk flour, baking powder, cinnamon, and salt.

    4. In another bowl mix sourdough starter or discard, melted butter, and brown sugar until smooth.

    5. Fold the wet ingredients into the dry ingredients until just combined.

    6. Toss diced peaches in a teaspoon of flour and fold gently into the batter.

    7. Pour batter into the prepared pan and smooth the top.

    8. Proof for 30–45 minutes if using active starter.

    9. Bake for 45–55 minutes until a toothpick comes out clean and the crust is golden.

    10. Cool in the pan for 10–15 minutes, then transfer to a rack to cool completely before slicing.
