  • 1/4 cup sourdough starter discard
  • 23 tablespoons cold water
  • 45 medium ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon (optional)
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar

  • Instructions

    1. In a bowl combine flour, salt, and sugar.

    2. Cut cold butter into the flour until coarse crumbs form.

    3. Stir in sourdough starter discard and cold water until dough just comes together.

    4. Form dough into a disk, wrap and chill for at least 30 minutes.

    5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    6. Toss sliced peaches with sugar, cinnamon, vanilla extract, and cornstarch.

    7. Roll dough on a floured surface into a 12-inch circle and transfer to the baking sheet.
