  • 1 1/2 cups all-purpose flour
  • 1/2 cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar or honey
  • 1/2 cup pizza sauce or marinara
  • 1 cup shredded mozzarella cheese
  • toppings of choice (pepperoni, vegetables, herbs)

  • Instructions

    1. In a bowl combine sourdough discard, warm water, and olive oil until smooth

    2. Stir in flour, salt, and sugar then knead for 5 minutes until dough is smooth and elastic

    3. Cover dough and let rest 30-60 minutes until slightly puffed

    4. Preheat oven to 425°F (220°C) and line a baking sheet with parchment

    5. Roll dough out to 1/4 inch thickness and cut 2 inch circles

    6. Place rounds on baking sheet and top each with a teaspoon of sauce, a sprinkle of cheese, and desired toppings

    7. Brush edges with olive oil and bake 10-12 minutes until crust is golden and cheese bubbles

    8. Let cool 5 minutes on a wire rack before serving
