  • 1/2 cup active sourdough starter (unfed)
  • 2 large eggs
  • 3/4 cup milk (dairy or non-dairy)
  • 1 cup Kodiak mix or whole wheat flour
  • 12 tablespoons protein powder (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons melted coconut oil or butter
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup mix-ins (blueberries, mini chocolate chips, diced apples)

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease or line a mini muffin tin.

    2. In a bowl whisk eggs, milk, vanilla, coconut oil, maple syrup, and sourdough starter until smooth.

    3. In another bowl combine Kodiak mix (or flour), protein powder, baking powder, and cinnamon.

    4. Pour dry ingredients into wet ingredients and fold gently until just combined.

    5. Fold in chosen mix-ins such as blueberries or chocolate chips.

    6. Spoon batter into muffin cups about 3/4 full.

    7. Bake 12-15 minutes until tops are golden and a toothpick comes out clean.

    8. Cool 5-10 minutes, then transfer to a rack. Store cooled bites at room temperature, refrigerate, or freeze in a single layer.
