1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
2. In a bowl combine sourdough discard, flour, olive oil, and salt until a thick paste forms.
3. Add water a tablespoon at a time if the dough is too stiff.
4. Fold in mixed seeds until evenly distributed.
5. Place dough between two sheets of parchment paper and roll to about 1/16 inch thickness.
6. Remove top parchment layer and score dough into cracker shapes with a knife or pizza cutter.
7. Sprinkle additional seeds or seasonings on top as desired.
8. Bake for 25 to 35 minutes, rotating halfway, until edges are golden and crisp.
9. Cool crackers on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
10. Store in an airtight container to maintain crispness.
